Baked Wonton Taquitos

Finally, I have a recipe for you. This is the first new thing I’ve made since the weather got nice. I just don’t feel like cooking when it’s warm out. I guess that’s why people have bbq’s. Anyways here it is.

Take beans (whatever kind you want, but I used Romano, also I used dried, but it was about a can’s worth), if using dried they should be soaked overnight then simmered until soft. Put the beans in a food processor. Dice an onion and a clove of garlic, sauté them until they smell good then add some chopped tomato, salsa and hot sauce. Cook on low for about 5 more minutes. Then throw this in the food processor too. Whiz it all up until it is a paste. If it is dry looking you can add water or more salsa.

Take wonton wrappers and spread the paste all across each one, then sprinkle grated cheese on top (we used cheddar and mozzarella, but use whatever you want). Roll them up into a long cylinder. Spray a cookie sheet with oil, then lay down the taquitos, giving them a little space, but not too much. Spray the tops with oil. Bake at 450 for about 10-15 minutes. The cheese will come out the ends a little bit, but it is delicious so don’t worry.

Let them cool a bit, then serve with sauces of your choice (might I suggest guacamole and sour cream).
